Moya Matcha Sencha is a classic Japanese leaf green tea from organic farms on the island of Kyushu. Sencha is the most commonly drunk tea in Japan and the best-known green tea in the world – a staple of daily life in Japanese homes.

When brewed, it has a golden-green colour and a delicately sweet, intensely refreshing flavour with grassy and buttery notes. The word ‘sen-cha’ (煎茶) literally means ‘simmered tea’ – a reference to the traditional process of pouring hot water over dried leaves. The best flavour results are achieved by brewing with soft water of neutral pH.

Method of use

B BrewingB : 2–3 g of leaves (1 level teaspoon) per 150 ml of water. Water temperature 70–80°C – not boiling, as boiling water will destroy the delicacy of the sencha. Brewing time 2 minutes. One portion of leaves can yield up to 3 infusions – subsequent infusions produce a milder, yet still aromatic brew.

Storage

Store in an airtight container, in a cool, dry place, away from light. Sencha tastes best when fresh – use within a few months of opening.
