Camelina sativa – commonly known as golden camelina or linseed – is a Polish oilseed plant, known in traditional Polish cuisine for centuries. The oil has a golden-yellow colour and a distinctive onion-spicy flavour that is hard to mistake for anything else. It works best where its flavour is meant to shine through – on roast potatoes, in quark salads, or drizzled over wholemeal bread.

Usage
Oil for cold dishes: salads, raw vegetable salads, sandwiches, cooked grains, potatoes with dill. The onion and spice flavour pairs well with green lettuce, cucumber, tomato, goat’s cheese, quark. A classic of traditional Polish home-made marinades. Not suitable for frying, baking or cooking – heating degrades the polyunsaturated fatty acids. Vegan.
Directions for use
Cold: 1 tablespoon (12 g) on a salad, raw vegetable salad or with boiled potatoes. Dressing: 2–3 tablespoons of oil with a tablespoon of apple cider vinegar or lemon juice. Straight from a teaspoon – 1–3 teaspoons a day. Drizzled over wholemeal bread or with cottage cheese (an old Polish classic).
Storage
Once opened, store in the fridge and use within a month – 1000 ml of camelina oil oxidises quickly after opening when exposed to light, heat and air. Keep the bottle tightly closed.
